Healthy Salsa Recipe Includes Peaches & Tomatoes

The Labor Day weekend is upon us and we all know what that means:  we're going to be surrounded by food, and lots of it.   For people trying to lose weight or just maintain a healthy dietary lifestyle, the three-day food fest is enough to put weight gain anxieties in full force.

Well, worry no more! Tons of healthy recipes exist and even better, many of them are extraordinarily easy to whip up.

I came across a tasty and healthy salsa recipe on TreeHugger.com, a web site dedicated to sustainability and all kinds of safe, smart alternatives. The simple recipe pairs the quintessential summer fruit, peaches, with tomatoes. Toss in a few other ingredients, and you've got  a homemade salsa that's free of unhealthy addititives or weight-sabatoging extras.

Yummy in my tummy! I love topping a few crackers with this healthy homemade peach and tomato salsa.
Ingredients:

- 2 cubed peaches
- 6 cherry tomatoes, sliced or quartered (I chose larger ones grown from my garden)
- 1 small yellow onion, diced
- Juice from one lime
- 1-2 tbsp olive oil
- Salt and pepper (to taste)
- Cayenne pepper (to taste)

Directions:

It doesn't get any easier than this: mix the ingredients together in  a large bowl, then serve chilled or at room temperature. 

Note: I found the mixture too chunky for my preference, so I put the mixture in a food processor and found it the texture to be much better for topping on a few crackers:

Salsa Health Benefits

The health benefits of this recipe are plenty. Besides the fact that it's free of unpronounceable ingredients and yucky additives, it's low in calories (one large one has about 68 calories) and great for overall health.(1)

Peaches are also filled with vitamins K, E, A and C, and are also a good source of potassium, all of which contribute to improved blood clotting abilities, reduced cancer risks, stronger bones, and a proper-functioning nervous system.(1) Not bad, right?

As for tomatoes, I'm all about their lycopene, which is basically what gives them their bright red hue. Color aside, it's also what makes them an anti-cancer powerhouse, known to help reduce prostate cancer risks in men.(2)

Add to this some onion and lime juice and this healthy salsa recipe is bursting with zesty flavor! It's a great recipe worth trying this Labor Day weekend...or any time for that matter! I'll definitely be making this one again.
